   The downtown Ripon deli and bakery that epitomized the word “fresh” with its sandwiches, pastries, salads, breads and soups now is going one step further. 

   Fat Bruce’s Bakery & Eating Kitchen soon will have fresh owners.

   Ripon residents David and Marie Knuth are set to assume ownership of the 8-year-old Watson Street business Tuesday, March 17. 

   They are buying it from Bruce and Sandra Campbell, who in November 2006 opened it at 221 Watson St. 

   David, who will run the business, emphasized that while he plans some slight modifications to Fat Bruce’s, much of its formula for success will remain unchanged.

   “I like Fat Bruce’s and the menu, so I don’t want to change the delicious food but I want to put my own personal stamp on it,” he said. 

   The name will remain the same,  as will much of the menu’s line of sandwiches and soups. 

   It will continue to offer pastries, however it will scale back the variety a bit to make way for a new addition: Ripon’s first and only micro-brewery.
